Celebrate St. Patrick’s Day with another wonderful seasonal creation by our own ITC Cafe chef Nelda, here at our natural cancer treatment center in Tijuana, Mexico – The Leap’n Leprechauns Breakfast Parfait

Nelda says: “Start your St. Patrick’s Day morning with a burst of nutritional goodness. Surprise the family with a green parfait that will send them leap’n through the day knowing you made healthy choices for you and your family.

This parfait is one of many cancer-fighting treats that our patients enjoy every day.

Make your own! You will need:

6 oz almond or coconut milk
1/4 cup chia seeds
1-2 teaspoons cocoa powder
1 carton (6 oz) plain coconut yogurt
2 teaspoons matcha powder
1-2 teaspoons organic vegan protein powder
2 teaspoons raw pumpkin seeds
1-2 kiwis, sliced
Mint extract
Stevia

Here’s how to get leap’n:

In a small bowl, stir the almond milk and cocoa together to make chocolate milk. Sprinkle in the chia seeds. Combine well, cover and put in the refrigerator overnight so the chia pudding blooms and becomes thick. Stir the matcha powder and vanilla protein powder into the yogurt until smooth – it will turn green! Flavor the yogurt with mint extract and drops of stevia to taste. To serve, layer the chocolate chia pudding in the bottom of a glass, next put a layer of pumpkin seeds. Then, add the matcha mint yogurt and finally top with a few slices of kiwi.

This serves two people. Calories: 192, Fat Calories: 66, Carbs: 18, Fiber: 9, Protein: 8 grams (per serving)
